Why the Beef?
Buffalo Meat & Jerky USDA Approved
Country Style Sausage, Summer Sausage, and all Jerky flavors have 4% Beef added to them in order to be
USDA Approved. All other cuts are 100% Buffalo Meat!
We have had a lot of questions on why we have to add beef to
some of our products. The following article from ""Bison World"" magazine
Jan/Feb/March 2001, Edition by Del Hensel may help answer some of those
questions.
...As many of you know, we have been working for the last 15
years or more to get *nitrites approved for bison (without adding another meat
product). We have been waiting on a five year nitrite safety study to be
completed, which was to help decide if nitrites were carginogenic or not. That
study came back with very good results, and it appears now that nitrites do not
cause cancer in mice and rats. Now that the study is complete I feel it is very
important for the bison industry to immedieately petition the FDA to allow
nitrites in pure 100% buffalo (bison). This might take a considerable amount of
time and money, as this needs to be done with a law firm through the legal
system.
